Pot Still Whiskey
Tullamore Dew is a distinctive Irish whiskey with a smooth, mild, mellow tastePot Still Whiskey is the most important feature and provides the foundation flavour. Starting with a mash of both malted and unmalted barley; it is distilled three times in a giant copper ‘still’.
Irish Pot Still Whiskey mean spirits distilled from a mash of minimum 30% malted barley and other cereals ordinarily grown in Ireland. It is made from natural raw materials, namely non-peated malted barley, barley, water and yeast; other natural enzymes may also be used at the brewing and fermentation stage. Malted barley and unmalted barley is initially crushed in a mill, mixed with hot water, and allowed to convert. This process allows the starch in the cereal mix to convert to a range of sugars.
Irish Grain Whiskey
Grain Whiskey has a simpler flavour than its pot still equivalent, being based on maize and a small proportion of malted barley. It is distilled in a continuous column still, again three times.
Irish Grain Whiskey is produced from whole cereals, normally maize or wheat. The whole cereals are milled and then mixed with water; this preparation is then cooked and cooled. Conversion is enabled by the addition of a mix of crushed malted barley. The malted barley releases the enzyme diastase, which facilitates the conversion of starch to sugars. The resultant wort is fermented to produce the “wash” which is distilled through a two or three column continuously operating patent still. The resulting spirit is matured as outlined above.
Irish Malt Whiskey
Malt Whiskey is distilled three times in pot still using only malted barley.
Irish Malt Whiskey applies to spirits distilled in pot stills from a mash bill of 100% malted barley. These can be a single malt from one distillery or combined with a malt whiskey from another distillery.
